Ham Egg and Cheese Breakfast Sandwich

2 English muffins
4 slices of deli ham
2 large eggs
2 slices of cheddar cheese
2 tablespoons unsalted butter
Salt and pepper to taste
Instructions:
Preheat a non-stick skillet over medium heat.
Cut the English muffins in half and lightly toast them.
While the English muffins are toasting, add the butter to the skillet and let it melt.
Crack the eggs into the skillet and season with salt and pepper. Cook for 2-3 minutes, or until the whites are set but the yolk is still runny.
Flip the eggs over and cook for another 30 seconds, or until the yolk is cooked to your desired consistency.
Place a slice of cheese on top of each egg and let it melt.
Place 2 slices of ham on the bottom half of each English muffin.
Use a spatula to transfer each egg and cheese combination to the top half of each English muffin.
